Emeril’s Essence 

Driving home today,  just letting my mind wonder, somewhat,  I started to think of Emeril’s Essence. I remember him telling his viewers of his TV show (don’t remember which one.  Its the one with him in the kitchen cooking by himself.) what he puts in his “Essence”.  He would use it as he very first ingredient/spice in almost EVERYTHING.  And I remember always asking myself, before I stumbled upon that particular show, what the hell was in his “Essence”?  

Loe and Behold I realized what I use myself for the basic seasonings in my  home coming is some of the same seasonings as his Essence.  So I know this must be good.  

Use it to make your own essence.  You can alter the amounts according to your taste.  Personally, I use less salt and I do not include the Thyme or Oregano.  

Emeril’s Essence Ingredients
8 tablespoons paprika3 tablespoons cayenne5 tablespoons black pepper, freshly ground6 tablespoons garlic powder3 tablespoons onion powder6 tablespoons salt2 1/2 tablespoons dried oregano2 1/2 tablespoons dried thymeDirections

Combine all spices in a bowl and mix well.  can be stored in an airtight container for up to 3 months.

Super Bowl is coming! The pizza delivery places will be so inundated with orders.  I think I am going to try an master making my own pizza between now and then.  And this looks like a good place to start. I now know I have been doing this all wrong in the past. I only heated my oven to 450 and preheated it for 30 minutes. but it takes about a full day so plan ahead.
No Kneed Pizza Dough
7 1/2 cups all purpose flour
3 cups water
1/2 teaspoon active dry yeast
4 teaspoons fine sea salt

I like to add as my toppings fresh mozzarella cheese, fresh basil, tomato sauce, onion and ground turkey/ pepperoni. Yum!

Pumpkin Bourbon Mousse
I think if there is no bourbon you can add a good whiskey…
INGREDIENTS
¾ cup sugar6 tbsp. bourbon½ tsp. kosher salt½ tsp. ground ginger½ tsp. ground cinnamon¼ tsp. freshly grated nutmeg¼ tsp. ground cloves8 eggs, yolks and whites separated1 cup canned pumpkinorange zest for garnish

It is Freakishly cold outside in NYC! The thermostat on my car read 3 degrees Fahrenheit this morning and this evening it read 9 degrees.  This weather made me desperately feel for some chicken soup to warm me to the bones. So, I made some good ole fashioned chicken soup. 
Then, I thought it couldn’t be just me.  If you feel for some chicken soup to warm your bones, make some!
